"Watermelon Moonshine" by Lainey Wilson is the jam of the summer! Some have even likened it to a modern version of "Strawberry Wine." This soon-to-be classic highlights the most famous treat during summer-- watermelon!

Most cowgirls give their horses the scrap rinds as a special treat for them, as well. But, there's a new way to enjoy every last bit of your watermelon. Check out this recipe for "Watermelon Rind Candy," a natural way to make refreshing candy. It tastes likes summer in each bite!

Recipe courtesy of The Western Wander Woman:

  • "Peel your watermelon so that only the white rind is left and cut them into stripes for easier drying at the end.
  • Soak in salt water overnight, strain, and wash off the next morning.
  • Simmer for 1 hour and strain out the water.
  • Make a syrup with 3 cups water, 3 cups sugar and a cut up lemon. Add the rinds and boil for 45 mins.
  • Strain and cover the rinds in sugar or add a little citric acid to the sugar for sourness!
  • Place on parchment paper in a dehydrator for 36 hours or until dry. It’s okay if the inside is a little squishy!
  • I stored them in an open mason jar to dry out as I was eating them, but they are seriously so good they won’t last a week."

The woman behind the recipe is Catie, a homesteader in Colorado. Her day job includes social media and graphic design. Outside of work, she enjoys breeding Muscovy Ducks and growing her gardens.

We cannot wait to try this recipe. Talk about a "Watermelon Sugar High" with these!
